    ALFREDO SAUCE

     
    1 can (10 3/4 ounces) Condensed Cream of Mushroom Soup
    1/2 cup milk
    1/2 cup grated Parmesan cheese
    1/4 teaspoon ground black pepper
    Stir the soup, milk, cheese, black pepper in a microwavable dish and cook until the mixture is hot and bubbling, stirring occasionally.

     

    HOMEMADE APPLESAUCE

     
    4-6 APPLES
    1 CUP WATER
    1 TABLESPOON LEMON JUICE

    2 TABLESPOON SUGAR (less if apples are sweet)
    1/4 TEASPOON CINNAMON

     

    Peel, core and quarter apples.

    Add to water and lemon juice.
    Bring to boil.
    Simmer approx. 30 min.

    Remove from heat and add sugar and cinnamon.

    Italian-Style Spaghetti Sauce

    Della's Recipe
    1/2 Cup Olive Oil (first squeeze)
    1/2 Cup Onion, chopped
    2 Cloves Garlic, crushed
    2 Tablespoons Sugar
    1 Tablespoon Salt
    1 1/2 Teaspoons Dried Basil Leaves
    1/2 Teaspoon Fennel Seed
    1/4 Teaspoon Black Pepper, course
    2 lbs 3 oz Italian-Style Plum Tomatoes
    6 oz Tomato Paste
    1/2 Cup Water
    Put oil in a 4-5 quart Dutch oven and heat over moderately high heat.  Add onion and garlic and saut?until golden.  

    Add sugar, salt, basil, fennel, pepper, tomatoes and tomato paste to saut閑d onion-garlic mixture in Dutch oven.  Pour in water; mix, mashing tomatoes with the back of a large wooden spoon.  Bring to boil over high heat; reduce heat to low.  Cover and simmer 1/2 hour.

    BIG BATCH (for freezing) - Spaghetti Sauce
    Make as above.

    1 cup oil
    2 cups onion
    8 cloves garlic
    140 oz. tomatoes (8 lb 12 oz)
    24 oz. tomato paste
    2 cups water
    8 tablespoons sugar or 13 Splenda packs
    4 tablespoons salt
    6 teaspoons sweet basil
    2 teaspoons fennel
    1 teaspoon pepper

    SWEET AND SOUR SAUCE FOR STIR FRY (or basting)

    1/4 cup ketchup
    1/4 cup mustard
    1/2 cup brown sugar
    2 tablespoons soy sauce

    Mix well by hand  (easy/fast)
